Fun-Shaped Pancakes

Makes 6 pancakes

Ingredients:

¾ cup (175 ml) of whole wheat flour

½ tbsp (8 m) baking powder

1 serving (200 ml) of prepared Enfagrow A+ Four

1 Omega-3 egg, slightly beaten

1 ½ tbsp (22 ml) vegetable oil

1 tbsp (15 ml) vegetable oil

½ cup (125 ml or 5 large pieces) fresh fruit, diced

Directions:

1. In a large bowl, mix the flour and baking powder.

2. Beat in the prepared Enfagrow A+ Four, egg and 1 ½ tbsp (22 ml) of oil with a whisk or electric mixer, beating until smooth.

3. Chill for 20 minutes.

4. Heat 1 tbsp (15 ml) of vegetable oil in a frying pan over low heat.

5. Pour in ¼ cup (60 ml) of the batter.

6. Drop some of the diced fruit (ex. strawberries or mangoes) in the batter while cooking.

7. When the edges begin to brown, and the top is covered with bubbles, flip the pancake over.

8. Repeat with the remaining batter.

Variation:

Incorporate your kid’s favorite fruits that are in season. Mangoes, oranges, and strawberries are rich in vitamin C, bananas are a good source of potassium, while blueberries are high in antioxidants!

Serving Suggestion:

Place the cooked pancakes on a plate and use cookie cutters to create fun shapes for your kids. Better yet, turn breakfast time into a fun time by lending them the plastic cookie cutters and letting them create the shapes they want as they eat.
